Module/course Summary

The Food & Beverage (F&B) sector is a pillar of the European economy, with 4.57 million people employed throughout the EU, a turnover of €1.1 trillion and €230 billion in value added, which make it the largest manufacturing industry in the EU (source: FoodDrinkEurope2018). In half of the EU Member States, the Food & Beverage (F&B) industry is the biggest employer within manufacturing. Moreover, this sector is unquestionably one of the worldwide recognised excellences of the Italian economy. Italian food and drinks are synonyms for quality and taste, and are increasingly appreciated even by people with eating habits that may be culturally quite different from the traditional Mediterranean cuisine. 
This sector clearly proved its resilience to economic downturn (anticyclical trends), suffering in the last decade much less than many other sectors and, sometimes, even boosting its growth.
 
In this context, huge managerial opportunities and challenges are offered in this sector, in combination with emerging new trends such as sustainability, consumer trust, balanced diets, healthier lifestyles (FoodDrinkEurope 2019), buy-local, zero-waste, meat-free/vegan/vegetarians, quality, agri-biotech, R&D and innovation, and technologies (i.e. blockchain). All these new trends will impact significantly on the F&B industry in the next few years and they required professional skilled people, ready to catch the opportunities and manage companies wisely.
 
This specialization is designed for students who are interested in getting a specific understanding and knowledge of the most relevant F&B managerial challenges. It aims at helping them to strengthen and apply their general Management skill in relation to this specific sector. 
 
A specific attention to sustainability issues will be devoted as both a cross-modules attitude and a specific topic for single courses and workshops (for example in food waste management).
